White Sauce Enchiladas & Elite Eight

War Eagle!  So proud of my tigers for advancing to the Elite Eight in college basketball!   After running errands yesterday, we settled in to watch basketball and make Enchiladas. Auburn plays this afternoon!  

I must have baby on the brain! I bought two wrong ingredients and forgot to add the broth to the butter and sour cream mixture.  The enchiladas were edible but I’ve made better.  It certainly wasn’t the fault of the recipe.

If you saw my last post, you know that I’m about to be a grandmother or “Nona” (yay)!  Planning the details of the reveal party derailed me evidently because I bought Ro-tel tomatoes instead of green chilies, corn tortillas rather than flour.  They pretty much crumbled when I placed them in the dish.

Then, I forgot to stir in the chicken broth and didn’t realize it until the dish was in the oven (insert eye roll).  So, I basted the enchiladas like a turkey.  They were a little dry, to say the least.  I guess because the moisture was on the outside rather than inside.

Still, they were eaten; just a little bland.  My bad :/

BTW, I made Ghirardelli Brownies for dessert and they turned out yummy!
